Add the oil, warm water, and vinegar. Mix until a smooth, pliable dough forms. Knead briefly for 2-3 minutes. Divide into 2 equal balls, wrap in plastic, and refrigerate for at least 30 minutes.2Step 2: In a bowl, combine the crumbled feta, drained ricotta, Parmesan, egg, dill, and pepper. Mix until evenly combined but still slightly chunky. Taste and adjust salt if needed.3Step 3: On a lightly floured surface, roll one ball of dough into a large, thin rectangle (approximately 30 x 50 cm). Brush lightly with oil. Fold into thirds like a letter. Turn 90 degrees and roll out again into a rectangle. Fold into thirds once more. Refrigerate for 15 minutes. Repeat with the second ball.4Step 4: Roll one laminated dough piece into a large rectangle about 3 mm thick. Cut into 8 squares (approximately 10 x 10 cm each). Place about 1.5 tablespoons of filling in the center of each square. Fold diagonally to form a triangle, pressing the edges firmly to seal. Crimp with a fork for a decorative edge and to ensure they stay sealed. Repeat with the second dough piece.5Step 5: Preheat the oven to 190°C (375°F). Place bourekas on parchment-lined baking sheets. Brush with beaten egg and sprinkle generously with sesame seeds (and nigella seeds if using). Bake for 25-30 minutes until deep golden brown and flaky. Cool for 5 minutes before serving.getsaucepan.com/r/0a0ab577-5908-4359-bb99-9ab332d8c0c8 · Original: https://kosherbreadpro.com/cheese-bourekas-recipe/
