Mote Con Huesillo

1. 1Step 1: The night before, soak the bones in 3 cups of cold water with the cinnamon and orange peel.
2. 2Step 2: The next day, in a saucepan, cook the bones and soaking water for 30 minutes or until the bones are soft. Remove the pot from the heat and set aside.
3. 3Step 3: In a frying pan make a dark caramel with the sugar and a little water. Pour the caramel into the pan with the hot bones and stir until the caramel dissolves. Let cool and refrigerate for 4 hours.
4. 4Step 4: To serve, distribute 2 bones and 3 spoonfuls of cooked mote in tall glasses or bowls and cover with the cooking liquid. Serve very cold.
