Whisk the dry ingredients well to combine. Then add in the grated butter. Use your hands to pinch the butter into the dry mixture until little pea-sized bits form throughout and all the butter is coated with the flour mixture.2Step 2: Make a small well in the center of the mixture and pour in the ice-cold water. Use your hands to bring everything together as much as you can. Empty the bowl and all residual bits onto a clean surface. Knead the dough, squeezing it onto itself until it forms into one cohesive mass with no dry bits.3Step 3: Shape the dough into a ball, cover with plastic wrap, and transfer to the refrigerator to chill for at least 30 minutes.4Step 4: Heat a large skillet over medium heat and coat the bottom with olive oil. Once the oil is shimmering, add the ground beef. Cook, stirring often, until completely browned. Add the chopped onion and continue cooking for about 3-4 minutes or until the onions are tender.5Step 5: Stir in the garlic and ginger and continue cooking. Then add the thyme, allspice, curry powder, scotch bonnet, and scallions. Stir together and continue cooking for another 2-3 minutes.6Step 6: Pour the stock/broth into the skillet and stir to combine for 1 minute. Then stir in the breadcrumbs and mix well until they are mostly absorbed by the beef mixture. Add the cubed butter and stir well until all butter has melted through. Note: At this point, look for the beef mixture to be juicy and moist. If it is dry, add a splash more of stock/broth until visibly moist (but not watery). Remove from heat and allow the beef mixture to cool down before assembling patties.7Step 7: Preheat the oven to 350°F. Position the oven rack in the center. Line a large baking sheet with parchment paper, foil, or a silpat liner and set aside.8Step 8: Remove the chilled dough from the refrigerator and divide into equal pieces for patties. Use a kitchen scale to get uniform size (5 ounces each for 8 patties). You can make smaller pieces for more patties.9Step 9: Roll each piece of dough in your palms into a smooth ball. Use a rolling pin to flatten into a round shape about 3 millimeters thick, about 6-7 inches.10Step 10: Fill one side of the pastry with about 4 tablespoons of the beef filling (2 tablespoons for smaller patties). Fold the empty side over the filling, forming a crescent shape. Bring the two pastry edges together and tuck/roll them under for extra measure.11Step 11: Carefully flip the patty over and use a fork to crimp the edges. Place on the prepared baking sheet and repeat until all patties are assembled, leaving a little space between each.12Step 12: Bake the patties for 25-30 minutes or until they achieve a light, golden brown color. Allow to cool for 5 minutes. Serve immediately.getsaucepan.com/r/151b77c0-0e1e-401e-8264-a9383a4df181 · Original: https://www.butterbeready.com/jamaican-beef-patties/
