Pap & Boerewors with Sheba

1. 1Step 1: Pour boiling water and salt into a saucepan with a thick base and a lid. Bring to boil.
2. 2Step 2: Add the maize meal to the boiling water in one go and do not stir. Close the lid, reduce heat and simmer gently for 5 minutes.
3. 3Step 3: Remove lid and stir well with a wooden spoon or a large kitchen fork - I prefer a fork. Fluff it up as you do so to ensure all dry bits are exposed to moisture.
4. 4Step 4: Replace lid, reduce heat to lowest setting possible and steam for about 40 minutes, until done. Burnt pap is awful so make sure you really turn the heat all the way down!
5. 5Step 5: Add a knob of butter to the pap shortly before fluffing it for the last time and serving, this adds to its flavour.
6. 6Step 6: Lightly brown the onion in butter or oil. Add all other ingredients and cook at a medium-high heat uncovered for about 10 minutes until the sauce thickens.
