1 Step 1: In a large bowl combine semolina, coarse semolina and mahlab, then pour in the warm butter and rub it with your fingers until the mixture resembles breadcrumbs. Leave it to rest for a couple of hours or overnight and knead it from time to time. When you're ready to make the cookies, warm the rose and orange blossom water and add it to the mixture together with yeast, then knead it well until you get a smooth dough.2 Step 2: Divide the dough into 75 pieces, 25 for each filling. Fifty of them roll into a ball, and twenty-five into an oblong. Place them on a parchment paper and roll them with a rolling pin to a 1/8 inch thickness. Transfer a piece of the flattened dough into the mold, and spoon a tablespoon of the filling into the middle. Fold up the edges and pinch them together until you get a flat surface. Press the cookie into the mold and remove the excess. Repeat the same procedure until you're finished with all, taking care to combine the mold with the designated filling.3 Step 3: Line a baking tray with parchment paper, arrange the cookies on top, taking care there is enough space between each. Bake in an oven preheated at 350 °F for 20 minutes. Once baked, sprinkle the nut ma'amouls with icing sugar and serve them together with the plain date ones.getsaucepan.com/r/18cb852f-d2fd-42f7-bb8b-e4922448a808 · Original: https://www.tasteatlas.com/maamoul/recipe/traditional-lebanese-maamoul
