Kunefe (Sweet Cheese Pastry)

1. 1Step 1: In a medium pot, combine sugar, water and lemon juice, put on the stove.
2. 2Step 2: Let it boil for 15 mins., then remove from heat and let it cool.
3. 3Step 3: Melt the butter.
4. 4Step 4: Chop the kataifi.
5. 5Step 5: Place half of kataifi in a 15 cm pan and press hard with your hands.
6. 6Step 6: Pour half of the melted butter over.
7. 7Step 7: Press with your hands very hard (make all kataifi stick together very well).
8. 8Step 8: Place sliced mozzarella cheese on top.
9. 9Step 9: Place the remaining kataifi on top, add butter.
10. 10Step 10: Press again with your hands.
11. 11Step 11: Put on the stove in low heat.
12. 12Step 12: Cook until the bottom turns golden, constantly turning the pan.
13. 13Step 13: Then turn the kunefe upside down and cook under again constantly turning the pan.
14. 14Step 14: Remove from heat and pour syrup immediately.
15. 15Step 15: You can garnish with ground pistachios.
16. 16Step 16: Serve immediately.
