Lebanese Date Cake

1. 1Step 1: Boil a cup of water in a small saucepan.
2. 2Step 2: Add the chopped dates and the baking soda slowly, then adjust the heat to low.
3. 3Step 3: Continue cooking until the sauce thickens, about 10 minutes, stirring almost constantly. Then set aside to cool.
4. 4Step 4: Preheat your oven to 180°C (350°F).
5. 5Step 5: Prepare a 23-cm (9-inch) cake pan by greasing and dusting it with flour, or by lining it with parchment paper.
6. 6Step 6: In a medium bowl, sift and combine the flour, baking powder, and ground cinnamon.
7. 7Step 7: In a separate larger mixing bowl, beat butter and sugar until creamy.
8. 8Step 8: Add eggs and continue mixing.
9. 9Step 9: Pour the cooled date syrup and mix until evenly combined.
10. 10Step 10: Add the sifted dry ingredients and fold to combine, do not overmix.
11. 11Step 11: Pour the date cake batter into the prepared pan.
12. 12Step 12: Place in the lower part of the oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out dry.
13. 13Step 13: Remove the cake pan from the oven and set aside to cool before transferring the cake to a plate.
