Venezuelan Pabellón Criollo

1. 1Step 1: In a POT, bring 2 quarts of water to a boil.
2. 2Step 2: Add meat, 1 onion (quartered), and salt & pepper to taste.
3. 3Step 3: Return to a boil. Cook over medium-low heat until the meat is tender.
4. 4Step 4: Take the meat out and let it cool. Reserve the broth.
5. 5Step 5: Pull the meat apart with a fork or by hand.
6. 6Step 6: In a large PAN, heat 2 tbsp oil.
7. 7Step 7: Fry 1 onion (finely chopped) until translucent.
8. 8Step 8: Add garlic and bell pepper.
9. 9Step 9: Fry for about 5 minutes.
10. 10Step 10: Add Pabellón Criollo spices. Mix well.
11. 11Step 11: Add salt to taste.
12. 12Step 12: Add tomato puree and 2 cups of the reserved broth.
13. 13Step 13: Mix well. Add pulled meat. Mix well.
14. 14Step 14: Add salt to taste.
15. 15Step 15: Cover and cook over low heat for 15 minutes.
16. 16Step 16: Occasionally, check the liquid and add broth if necessary.
17. 17Step 17: Serve with rice, beans, and fried plantains, or your preferred sides and toppings.
