Matoke Recipe: How to Cook East African Green Banana Stew

1. 1Step 1: Peel all green bananas and cut each in half or into thirds. Place in salted water to prevent browning.
2. 2Step 2: Heat oil in a heavy pot over medium heat. Add onion and cook 5–6 minutes until golden. Add garlic and ginger and stir 1 minute.
3. 3Step 3: Add chopped tomatoes, cumin, turmeric, and paprika. Cook 8–10 minutes until the tomatoes form a thick sauce.
4. 4Step 4: Drain matoke and add to the pot. Pour in stock, season with salt and pepper, and stir to coat.
5. 5Step 5: Bring to a boil, reduce heat, cover, and simmer 35–40 minutes until bananas are completely tender.
6. 6Step 6: Optional: stir in 200ml coconut milk in the last 10 minutes for a coastal variation. Garnish with dhania and green chilli.
