Spray an 8½ x 4½-inch loaf pan with nonstick cooking spray, then line the bottom and sides with parchment paper to make it easier to remove the baked loaf from the pan for cooling.2Step 2: If using fresh ripe bananas: Place 5 bananas in a microwave-safe bowl; cover with plastic wrap and cut several steam vents in the plastic with a paring knife. Microwave on high power until bananas are soft and have released liquid, about 5 minutes.3Step 3: If using frozen bananas: Defrost frozen, peeled bananas by placing them in a microwave-safe bowl, covering the bowl loosely with a paper towel, and defrosting in the microwave for about 3 minutes, or until mostly thawed.4Step 4: Pour the microwaved bananas and liquid into a fine-mesh strainer set over a medium bowl and allow to drain out the banana liquid for about 15 minutes on the countertop.5Step 5: Transfer the banana liquid to a medium saucepan and cook over medium heat until reduced to ¼ cup, about 5 minutes. Remove the pan from heat, stir the reduced liquid into the bananas, and mash until smooth. Whisk in the butter, eggs, brown sugar, and vanilla.6Step 6: Whisk the all-purpose flour, whole wheat flour, baking soda, and salt together in a large bowl.7Step 7: Pour the banana mixture into the flour mixture and stir until just combined. (Cook's Illustrated: Fold in chopped walnuts if you're using them.)8Step 8: Scrape the batter into the prepared pan. Slice the remaining banana diagonally into ¼-inch-thick slices. Arrange the banana slices on top, on either side of the loaf. Sprinkle 2 teaspoons granulated sugar evenly over the loaf.9Step 9: Bake the banana bread until a toothpick inserted in the center of the loaf comes out clean. Baking time can take anywhere from 55 to 75 minutes depending on your oven; mine took 65 minutes.10Step 10: Cool the bread in the pan on a wire rack for 15 minutes, then remove the loaf from the pan and continue to cool on the wire rack.getsaucepan.com/r/386d091e-fa5c-4766-ae9b-e79a95abaca5 · Original: https://thedeliciouslife.com/ultimate-banana-bread-recipe/
