1. 1Step 1: Set the oven to its highest temperature, around 240–270°C. Add a little beef dripping to each hole of the Yorkshire pudding tin and heat it until smoking hot.
2. 2Step 2: Sift the flour and salt into a bowl. Add the beaten eggs and half the milk, whisk until smooth, then add the remaining milk and whisk again. Rest the batter for 10–15 minutes.
3. 3Step 3: Carefully remove the hot tin and quickly pour the batter into each hole until one-half to three-quarters full. Return it to the oven immediately.
4. 4Step 4: Bake for 20–25 minutes until the Yorkshire puddings are tall, golden and crisp. Do not open the oven door during the first 20 minutes.
5. 5Step 5: Serve straight away with roast beef, chicken, gravy or a rich vegetable casserole.
