Easy French Chocolate Mousse

1. 1Step 1: Set a Bain Marie: add about 2 cups of water in a medium saucepan over low heat, and place a heat-proof bowl on top; the steam will melt the chocolate without burning it.
2. 2Step 2: Add the Organic Dark Chocolate into the bowl. Stir continuously using a spatula until half melted.
3. 3Step 3: When half melted, add the butter and milk chocolate. Keep stirring until completely melted and combined. Set aside to cool down and use later.
4. 4Step 4: In a large bowl, add in the egg whites and pinch of salt. The bowl can't have traces of oil or the egg whites won't grow.
5. 5Step 5: Mix the egg whites using an electric mixer until you get firm peaks. Don't overbeat.
6. 6Step 6: Take the bowl with the melted chocolate, it should be a bit warm, and add in the sugar and egg yolks. Stir until well combined.
7. 7Step 7: Add about two tbsp. of melted chocolate mixture into the egg whites and fold it in. Be gentle to maintain the light texture.
8. 8Step 8: When combined, add half of the chocolate, fold it in and keep doing this until all the chocolate is folded into the egg whites.
9. 9Step 9: Leave the mousse in the bowl to chill or spoon it into individual cups to serve, depending on the presentation you'd like.
10. 10Step 10: Place the mousse in the refrigerator for at least 3 hours to firm, preferably overnight.
11. 11Step 11: Serve and enjoy.
