Socca Chickpea Flour Flatbread

1. 1Step 1: Combine the chickpea flour, water, and salt in a bowl and mix well.
2. 2Step 2: Add 1 1/2 tablespoons of the olive oil to the batter and mix.
3. 3Step 3: Let the batter rest for 2 to 3 hours.
4. 4Step 4: Add the remaining 1 tablespoon of olive oil to a cast iron skillet.
5. 5Step 5: Preheat the cast iron skillet under the broiler for 2-3 minutes.
6. 6Step 6: Carefully remove the very hot skillet from the oven.
7. 7Step 7: Pour enough batter into the skillet to just cover the bottom, swirling to coat evenly. For a 6-inch skillet, use about 1/3 cup of batter.
8. 8Step 8: Place the skillet back under the broiler and bake for 3 to 4 minutes.
9. 9Step 9: Carefully remove the hot pan from the oven and remove the baked socca from the pan.
10. 10Step 10: Carefully oil the pan again and cook the remaining batter in the same way.
