Authentic Tunisian Tajine in a Casserole

1. 1Step 1: In a large casserole dish, heat the olive oil. Add the chopped onion and minced garlic, sauté until translucent. Add the pieces of meat and brown them on all sides. Add the spices: turmeric, paprika, coriander, cumin, cinnamon, salt and pepper. Mix well to coat the meat.
2. 2Step 2: Add the diced tomatoes and tomato paste. Mix well. Add the potatoes, carrots, zucchini and pepper. Mix gently. Add the cooked chickpeas. Cover with water to the level of the ingredients. Bring to a boil, then reduce heat and simmer, covered, for about 45 minutes to 1 hour, until meat and vegetables are tender and sauce has thickened.
3. 3Step 3: Serve hot, accompanied by Tunisian bread or couscous.
