Place the meat in a large bowl and add cool water with either some vinegar or lemon juice. Gently rub the pieces together with your hands to remove any debris or excess fat. Rinse, drain, and pat the meat dry.2Step 2: In the same large bowl, add the dried and fresh seasonings to the goat meat: curry powder, all purpose seasoning, salt, black pepper, scotch bonnet pepper, pimento seeds, garlic powder, onion powder, escallion, onion, garlic, thyme, and ginger. Cover and marinate in the fridge overnight, or at least a few hours.3Step 3: Heat a large dutch oven or pot over high heat and add vegetable oil. When hot, add the goat meat and cover with a heavy lid.4Step 4: The goat meat will eventually release its own liquid. When this liquid has drawn down (almost like frying), add 5 cups of water, or enough to fully cover the meat. Cover and cook on medium heat for approximately 1 to 1.5 hours, or more depending on the meat.5Step 5: Periodically check the pot to ensure the water hasn't dried out before the meat is tender. Keep adding additional cups of water until the desired tenderness is reached.6Step 6: Add the additional seasonings: potato, thyme, garlic, ginger, sweet pepper, and salt if needed. Then add one cup of water (or more) to cover the potatoes and meat. Simmer on medium low heat until the potatoes are fork tender and the sauce has thickened.
