Polish Potato Dumplings (Kopytka)

1. 1Step 1: Place the cold mashed potatoes in a mixing bowl.
2. 2Step 2: Add the egg and flour, and mix until the dough comes together.
3. 3Step 3: Place the dough onto a floured surface and divide it into two parts.
4. 4Step 4: Roll one part of the dough into a long log and slice into 1.5 to 2 inch dumplings.
5. 5Step 5: In a large saucepan or pot, boil water and add 1 teaspoon of salt.
6. 6Step 6: Add 5 to 8 dumplings at a time to the boiling water and cook until they start to float at the top.
7. 7Step 7: Remove the cooked dumplings and place them on a plate. Repeat with the remaining dumplings.
8. 8Step 8: You can serve the dumplings right away as a side dish or follow the suggestion below.
9. 9Step 9: In a skillet, heat up 1 tablespoon of olive oil and 1 tablespoon of butter.
10. 10Step 10: Add the cooked dumplings and cook until golden brown. Remove them onto a plate.
11. 11Step 11: Add 2 minced garlic cloves, 1 small chopped yellow onion, 4 chopped bacon slices, and 4 washed and sliced white mushrooms to the skillet.
12. 12Step 12: Saute until fragrant and the bacon is crispy.
