1. 1Step 1: Gently remove the grape leaves from the jar, separate them, and rinse under cold water. Place them in a bowl of warm water to soften while you prepare the filling.
2. 2Step 2: In a large bowl, combine the rice, olive oil, chopped dill, mint, parsley, onion, garlic, lemon juice, salt, and pepper. Mix well to ensure the flavors are evenly distributed.
3. 3Step 3: Place a grape leaf on a clean surface, shiny side down, with the stem facing you. Trim the stem if it's too long.
4. 4Step 4: Place about a teaspoon of the rice filling near the stem end of the leaf. Fold the sides of the leaf over the filling, then roll it up tightly into a compact cylinder.
5. 5Step 5: Repeat this process with the remaining grape leaves and filling.
6. 6Step 6: Line the bottom of a large pot with a few extra grape leaves to prevent sticking.
7. 7Step 7: Place the dolmades seam-side down in the pot, packing them closely together in layers.
8. 8Step 8: Pour the vegetable or chicken broth over the dolmades. Place a heatproof plate on top to prevent them from unraveling during cooking.
9. 9Step 9: Cover the pot and bring the broth to a gentle simmer over medium-low heat. Let the dolmades cook for about 40-45 minutes or until the rice is tender and the grape leaves are soft.
10. 10Step 10: Once cooked, remove the dolmades from the pot and let them cool slightly.
11. 11Step 11: Serve the dolmades warm or at room temperature with a side of Greek yogurt or tzatziki sauce and lemon wedges for squeezing.
