If you choose to make them less sweet, you can reduce up to a cup of sugar.2Step 2: Preheat oven to 350 degrees F. Spray standard-size muffin pans with cooking spray (enough for 30-count).3Step 3: Melt butter in a medium saucepan on medium heat. Add milk, stirring occasionally, until it is warm. Turn off and remove from heat.4Step 4: Whisk flour and baking powder in a small bowl. Set aside.5Step 5: In a deep mixing bowl, beat eggs for 1 minute. Slowly add sugar, 1 cup at a time. Continue beating for 1 minute after the last addition.6Step 6: Add vanilla extract and lemon zest. Blend.7Step 7: Gradually add 1 cup of milk and the melted butter mixture on medium speed. Beat for 30 seconds. Slowly add half of the flour mixture, then 1 cup of the milk mixture, beating for 30 seconds after adding the milk.8Step 8: Slowly add the rest of the flour, then 1/2 of the remaining milk. Beat for 1 minute. The batter will be watery and will splash. Reduce speed to medium-low if needed. Tipping a large paper plate over the bowl will help contain the splashing.9Step 9: Add the rest of the milk. Beat for 30 seconds.10Step 10: Fill muffin pans 3/4 full.11Step 11: Bake for 35–38 minutes or until the edges are golden brown and the center is set.12Step 12: Cupcakes will sink slightly in the center upon standing.13Step 13: Store refrigerated and serve chilled or at room temperature.getsaucepan.com/r/4b3b946e-3aed-47a7-97e7-b9d4e849d9fb · Original: https://ingoodflavor.com/queijadas-portuguese-custard-cupcakes/
