Portuguese Traditional Meat and Bean Stew • Feijoada de Carne

1. 1Step 1: In a small pot, prepare the rice with a drizzle of olive oil, a clove of chopped garlic, chopped carrots, and one cup of rice. Sauté for a bit, then add two cups of hot water and a pinch of salt. Cover and let it simmer on low heat for about 10 minutes until it’s tender.
2. 2Step 2: In a wide pan, add chopped onion, garlic cloves, and diced bacon. Sauté them with a drizzle of olive oil, salt, and pepper.

4. 4Step 4: Add the canned peeled tomatoes, season with a pinch of salt, and let it cook for about 10 minutes until the tomatoes soften.
