Easy Quiche with Spinach, Bacon Ham

1. 1Step 1: Preheat oven to 375°F (190°C).
2. 2Step 2: If using homemade pie dough, roll it out to a 12-inch (30.5 cm) circle and about 1/8-inch (3 mm) thick. It is okay if it is larger than 12 inches; you will trim off the excess. Place the dough into the tart pan or pie pan, fitting it into the edges. If using store-bought dough, skip the rolling out part.
3. 3Step 3: Trim off excess dough, usually trimming about 1/2 inch above the tart pan for a rustic look and to give extra crust above the quiche level. Allow the dough to relax and chill in the fridge or freezer for at least 30 minutes or more. This step can be skipped, but it helps minimize shrinking during baking.
4. 4Step 4: Blind bake the pie crust: Line the inside of the formed crust with aluminum foil, making sure the foil completely covers the sides, then fill with a layer of pie weights. Place the pan on a baking sheet.
5. 5Step 5: Bake at 375°F (190°C) for 15 minutes, then carefully remove the foil and weights. Poke the base a few times with a fork.
6. 6Step 6: Continue baking at 375°F (190°C) for an additional 5-10 minutes, or until the crust is lightly browned.
7. 7Step 7: While the crust bakes, make the egg filling: In a bowl, whisk together the 8 eggs, 1/2 cup half & half or milk, 1/4 teaspoon salt, and black pepper to taste.
8. 8Step 8: Add the sliced green onions, 1/2 cup parmesan cheese, 2 cups chopped spinach, and chopped bacon or ham. Stir the egg mixture until everything is well combined. Optionally, reserve a little of the bacon/ham and green onions to float on top of the quiche before baking.
9. 9Step 9: When the crust is finished blind baking, pour the egg mixture into the crust. Gently stir the mixture to make sure all the filling is evenly distributed throughout the quiche. Optionally, top with the reserved bacon/ham and green onion.
10. 10Step 10: Bake the quiche at 375°F (190°C) for about 30-35 minutes, or until the top is golden brown and the egg is cooked. Insert a toothpick or a knife in the middle of the quiche; it should come out clean when it is cooked.
11. 11Step 11: Allow the quiche to cool for about 15 minutes before serving, or serve at room temperature.
