Cajun Blackened Catfish

1. 1Step 1: In a bowl, mix together the black pepper, kosher salt and blackened seasoning until thoroughly combined.
2. 2Step 2: Press the catfish fillets into the spice mixture in the bowl and coat thoroughly.
3. 3Step 3: Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill.
4. 4Step 4: Light the burner and place a skillet onto the burner over high heat.
5. 5Step 5: Pour the olive oil into the skillet covering the entire cooking surface.
6. 6Step 6: When the oil in the skillet is hot, lay the catfish fillets into the skillet.
7. 7Step 7: Cook until the spices are seared onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side.
8. 8Step 8: Don't breathe smoke from burning spices.
