Socca (Chickpea Flatbread)

1. 1Step 1: In a medium bowl, whisk together the chickpea flour and salt. While whisking, slowly add the water and 2 tablespoons of the olive oil, starting with the oil, and continue whisking until the mixture is smooth. The batter should be watery.
2. 2Step 2: Cover the bowl and let it sit at room temperature for 1 to 12 hours. This allows the chickpea flour to hydrate and absorb the water, giving a smoother texture without graininess. Rest for at least 1 hour.
3. 3Step 3: Place a 10-inch cast iron skillet or another oven-safe pan in a cold oven and preheat the oven to 450°F (230°C) for about 10 minutes.
4. 4Step 4: Once the oven is preheated and the pan is very hot, add the remaining 1 tablespoon of olive oil to the pan and spread it to coat the surface and sides. Pour in the batter; it should sizzle and begin cooking on contact.
5. 5Step 5: Bake for 8-10 minutes, then broil until golden brown and the edges are crispy. The socca should naturally pull away from the sides of the pan.
6. 6Step 6: Garnish with salt and pepper and serve hot. Optionally, garnish with rosemary and parmesan.
