Placki Ziemniaczane (Polish Potato Pancakes)

1. 1Step 1: Peel potatoes and grate on the fine side of the grater.
2. 2Step 2: Grate onion.
3. 3Step 3: Drain potatoes and onion.
4. 4Step 4: In a bowl, beat egg, stir in flour, salt, and pepper until smooth.
5. 5Step 5: Add drained potatoes and onion, stirring until well combined.
6. 6Step 6: Heat 1/4 inch oil in frying pan over medium-high heat.
7. 7Step 7: Add potato batter, 1/4 cup at a time.
8. 8Step 8: Using the back of a spoon, spread the batter until the pancake is about 1/2 inch thick, I was able to make 3 at a time.
9. 9Step 9: Cook 2 to 3 minutes on each side, my frying pan is larger than the largest burner, so I also rotated them half way through each side to keep the middle from cooking and the outside edge from not getting dark enough.
10. 10Step 10: Drain on paper towels.
