Hash Brown Egg Nests

1. 1Step 1: Peel and grate the potatoes, then place them in a bowl of cold water. Rinse them a few times to remove excess starch, then dry them thoroughly with paper towels.
2. 2Step 2: Put the dried shredded potatoes in a bowl and toss with 1 tablespoon of oil and the seasonings.
3. 3Step 3: Preheat a griddle or large skillet over medium heat. Add the potatoes and spread them in an even layer. Cook for 5 minutes until they start to brown, then stir and continue cooking for about 5 more minutes until cooked through and crispy in spots. Add more oil if the skillet seems dry.
4. 4Step 4: When the hash browns are mostly cooked, divide them into 4 even mounds. Use a metal mold to press a well in the center of each mound, packing the hash browns against the mold to hold their shape. If using a plastic mold, remove the hash browns from the skillet first.
5. 5Step 5: Crack one egg into each well. Cook for about 90 seconds until the eggs are mostly set.
6. 6Step 6: Carefully flip each hash brown and egg and cook for 15 seconds on the second side to set the eggs.
7. 7Step 7: Remove the nests from the skillet, garnish with fresh scallions, and serve with bacon, fruit, and/or toast.
