Beef Suya (Nigerian Spice-Rubbed Grilled Beef Skewers)

1. 1Step 1: Freeze the beef briefly to firm it up, then cut it crosswise into thin, ⅛-inch-thick slices.
2. 2Step 2: Toss the meat with some oil, salt, and a portion of the yaji spice rub, then set it aside for 30 minutes (or up to 24 hours ahead).
3. 3Step 3: Thread a few strips of beef onto each metal skewer, pressing the slices as flat as possible.
