Orange and Almond Cake (Kosher)

1. 1Step 1: Boil the oranges for 2 hours and cool, or steam them in a steamer for 50 minutes and cool. This can be done ahead of time.
2. 2Step 2: Preheat the oven to 190 degrees Celsius or Gas Mark 5 (375 degrees Fahrenheit).
3. 3Step 3: Grease a high-sided cake pan (preferably with a movable bottom); you can also use greaseproof paper.
4. 4Step 4: Break the eggs into a bowl and beat or blend them.
5. 5Step 5: Add the caster sugar to the eggs and beat or blend.
6. 6Step 6: Place the oranges in the egg and sugar mixture and blend well until smooth with no orange pieces.
7. 7Step 7: Add the almond meal or ground almonds and baking powder.
8. 8Step 8: Pour the batter into the cake pan and sprinkle caster sugar on top.
9. 9Step 9: Bake for 1 to 1 1/2 hours until golden.
10. 10Step 10: Serve cool. The cake can be frozen.
