1. 1Step 1: Prepare the filling the previous day or early in the morning and let it cool.
2. 2Step 2: Chop the onion. In a frying pan with two tablespoons of oil, fry the onion until it is transparent and begins to brown. You can add some very fine garlic or crushed to give more flavor. Separate to later add them to the meat.
3. 3Step 3: In a saucepan over medium heat put the oil and when hot fry the meat until it is a little golden. Stir occasionally and prevent it from sticking. After about 10 minutes add the salt, pepper, cumin and merkén stirring for a minute more.
4. 4Step 4: Add the water and cook for 10 more minutes. Depending on the meat, how much liquid it contains, if it is too dry, add a little more water.
5. 5Step 5: Then add the onions and mix well cooking for 5 more minutes over medium heat. Adjust times depending on the size of the meat.
6. 6Step 6: Allow cooling and refrigerate.
7. 7Step 7: If using whole choclos, cut the corn kernels with a knife to shed. If using frozen corn, the next step will be the same: cook the corn in a pot with water and a little salt. Since it starts to boil the corn is cooked in 6 minutes! If you leave it longer it will get hard again and it will take more than 20 to get soft again.
8. 8Step 8: Remove the excess water in a colander and add the basil. With a mini primer grind the corn kernels leaving the consistency that you like. I like to leave some more whole pieces so that you feel something when chewing.
9. 9Step 9: Then add the milk, butter, and pepper.
10. 10Step 10: The pastry should be thick but it's very important that it's not dry, so control the thickness and add a little more water if necessary. This is when you can add the cornmeal and you can cook it for another 8 minutes.
11. 11Step 11: Put the pino in the base and on it the eggs, olives, and chicken. Then add the pastry and sprinkle a little bit of granulated sugar on the surface. This will make them brown and look beautiful!
12. 12Step 12: Bake at 200º for 50 minutes with the grill on for the last 15 minutes.
