Mix well into a dough, cover with plastic wrap, and let it ferment at room temperature until doubled in size (about 1 hour at 27°C/80.6°F, but time may vary).2Step 2: Once risen, punch the dough a few times to release the gas. Cover again and rest for another 20 minutes.3Step 3: Oil your hands to prevent sticking, then divide the dough into 6 equal pieces for medium-sized pancakes.4Step 4: Flatten one piece of dough in your hand, add about 1 tablespoon of filling, then seal by gathering the corners. Repeat with the remaining dough.5Step 5: Preheat a frying pan over medium heat and add a thin layer of cooking oil.6Step 6: Place a dough piece (or more if your pan allows, leaving room for expansion) in the pan and cook on medium heat until the bottom is lightly golden (about 30 seconds). Flip, press down with a spatula or press, and cook until golden (about 1 minute). Flip once more, reduce heat to low, cover with a lid, and cook until the sugar filling melts (about 1 minute).7Step 7: Transfer the pancake to a plate and repeat with the remaining dough.
