Kenyan Samosas (Sambusas) with Lamb Stuffing

1. 1Step 1: To make the filling: On low heat in a pan, saute the shallots/ onions in the coconut oil until translucent.
2. 2Step 2: Add the garam masala, curry powder, ginger powder, and bullion to the sauteing onions and allow to toast lightly for 2- 3 minutes, stirring continuously.
3. 3Step 3: Add the ground lamb and continue to stir, turning up the heat to medium.
4. 4Step 4: Once the meat is no longer pink, add the peas and cook for 10 minutes.
5. 5Step 5: Taste the meat and adjust the salt if necessary.
6. 6Step 6: Allow the filling to cool completely.
7. 7Step 7: To assemble, cut the spring roll sheets in half to form rectangles, place about 1 tsp of the filling on the top of the dough, and follow the folding techniques.
8. 8Step 8: Seal the dough with the plain flour and water mixture.
9. 9Step 9: In a pan or fryer heat up enough oil (to 350 degrees Fahrenheit) to fry the samosa triangles.
10. 10Step 10: Once the samosas are golden brown, take them out of the oil and drain.
11. 11Step 11: Serve them warm.
