Matzo Brei

1. 1Step 1: Break matzo into 1/2-inch pieces and place in a medium bowl. Cover with very hot tap water and let stand for about 30 seconds, then drain.
2. 2Step 2: Beat eggs in another medium bowl and season with salt and pepper. Add the drained matzo and mix until combined and a wet batter forms.
3. 3Step 3: Heat oil in a large skillet over medium-high heat. Spoon scant 1/4-cupfuls of batter into the skillet, making 4 pancakes.
4. 4Step 4: Fry, turning once, until golden and just cooked through, about 1 minute per side. Serve with jam, syrup, or whatever else you'd like.
