East African Donuts: Mandazi

1. 1Step 1: Place the warm water in a bowl and sprinkle with the sugar and yeast and let it develop for 10 minutes.
2. 2Step 2: Mix coconut cream and water, so it dissolves.
3. 3Step 3: Mix flour, sugar, cardamom and yeast into a bowl.
4. 4Step 4: Slowly stir the coconut cream into this mixture and then knead it well.
5. 5Step 5: Cover the dough and let it rest overnight.
6. 6Step 6: Divide the dough into 3 equal parts and roll each into a 15 cm (6 inch) circle about half a cm (0.25 inch) thick.
7. 7Step 7: Cut these circle into quarters.
8. 8Step 8: Let them rest on a floured surface until they double in size (will take about an hour).
9. 9Step 9: Deep-fry the mandazi in oil on medium heat, about 190°C (375°F) until golden brown.
10. 10Step 10: Remove them with a slotted spoon to a baking tray covered with absorbent kitchen paper to remove the excess oil.
