Hungarian Nokedli (Dumplings)

1. 1Step 1: Place a large pot filled with salted water and bring to a boil.
2. 2Step 2: Combine eggs, salt, and water, beating well with a whisk.
3. 3Step 3: Add flour, a little at a time.
4. 4Step 4: Add only enough flour to make a soft, sticky dough.
5. 5Step 5: Let the mixture rest for about 10 minutes.
6. 6Step 6: Beat the mixture again.
7. 7Step 7: Using the side of a teaspoon, spoon small amounts of dough into the boiling water.
8. 8Step 8: Dip the spoon in the hot water to remove the dough from the spoon (if you have a spaetzel maker, that makes it easier as you want very small noodles).
9. 9Step 9: The noodles are done when they float to the top.
10. 10Step 10: Remove from the water with a large slotted spoon and place in a colander.
11. 11Step 11: Rinse with cold water.
12. 12Step 12: You may want to make the dumplings in 2 or 3 batches so they don't overcook.
13. 13Step 13: Serve with chicken paprikas.
14. 14Step 14: The dumplings are also nice added to a stew.
15. 15Step 15: You can heat the dumplings in a frying pan with melted butter.
16. 16Step 16: Do not let the dumplings get too brown or crisp.
