Steamed Yuca with Garlic (Yuca con Mojo)

1. 1Step 1: Bring a pot of salted water to boil before adding in the yuca. Boil until fork tender, about 20-30 minutes, depending if starting from fresh or frozen. Strain from the water and set aside.
2. 2Step 2: Once the yuca has cooled enough to touch, remove the fibrous core and cut as desired.
3. 3Step 3: In a saucepan combine oil, onion, and garlic. Cook over medium low heat until the onions begin to soften, about 5-10 minutes. Add the adobo and lime juice and cook a few more minutes. Turn off the heat and add salt and pepper to taste.
4. 4Step 4: In a serving bowl, toss the mojo sauce with the yuca, until evenly coated. Sprinkle with fresh cilantro, serve and enjoy!
