Middle Eastern Style Lamb Breast

1. 1Step 1: Preheat the oven to 300ºF (150ºC).
2. 2Step 2: Mix the rice with the salt, spices, and ground lamb until well incorporated. Put the rice in a medium-sized pot and add the water.
3. 3Step 3: Bring to a boil, then lower the heat to a gentle simmer. Cover the pot, leaving a gap for steam to escape. Cook until all the water has evaporated and the rice is done.
4. 4Step 4: Cut an opening between the lamb fat and meat using a very sharp knife. Create a pocket for the stuffing.
5. 5Step 5: Once the rice is done, allow it to cool so it reaches a temperature you can work with. Stuff the lamb breast with the rice stuffing.
6. 6Step 6: Put the stuffed lamb in a pan and cover tightly with aluminum foil. Place in the oven for an hour.
7. 7Step 7: Raise the temperature to 450ºF and cook for an additional hour.
8. 8Step 8: Lower the temperature to 200ºF and leave for two more hours.
9. 9Step 9: Serve with salad and yogurt.
