2. 2Step 2: Put the sweet potatoes and onion in a bowl.
3. 3Step 3: Drizzle with olive oil and season with salt.
4. 4Step 4: Arrange the sweet potato and onion on a baking sheet.
5. 5Step 5: Place in the oven until the potatoes and onions are tender and golden, about 35 to 50 minutes.
6. 6Step 6: While the potatoes are in the oven, heat up the sweet corn and frozen peas.
7. 7Step 7: In a saucepan, melt the butter and heat up the buttermilk.
8. 8Step 8: Transfer the sweet potato and onion from the oven into a bowl, add the warm buttermilk mixture, peas & corn and mash until desired texture.
9. 9Step 9: Taste and season with more salt & pepper, if desired.
