Saganaki (Fried Greek Cheese)

1. 1Step 1: Slice the cheese block into two 1/2-inch-thick slices. Rinse each slice with room-temperature water, then pat dry.
2. 2Step 2: Spread flour on a rimmed plate and season with black pepper. Dredge both cheese slices in the flour, coating all over.
3. 3Step 3: Heat olive oil in a nonstick skillet over medium heat. When the oil is hot but not smoking, place the cheese slices in the skillet.
4. 4Step 4: Pan-fry for a couple of minutes until golden brown on the bottom. Lower the heat if browning too fast, then flip and sear until the other side is golden brown.
5. 5Step 5: Squeeze lemon juice over the cheese and serve immediately.
6. 6Step 6: Optional flambé: Remove the pan from heat, pour the brandy or ouzo into the skillet, and carefully ignite it. Once the alcohol burns off, squeeze lemon juice on top and enjoy.
