1. 1Step 1: Fry the minced garlic in oil until lightly brown in a large pot. Add the shrimp shells and stir fry until they turn pink.
2. 2Step 2: Add fish sauce, brown sugar and chicken stock. Boil on low heat for 30 minutes.
3. 3Step 3: Strain and discard all the solids from the broth. Add more fish sauce if necessary.
4. 4Step 4: In a wok, fry minced garlic in 2 tablespoons of oil until lightly brown. Add the shrimp and squid and fry until cooked. Remove the shrimp and squid from the wok and set them aside.
5. 5Step 5: Heat the remaining oil in the same wok and add the beaten eggs. Break the eggs into smaller pieces and push them aside in the wok.
6. 6Step 6: Add the bee hoon and yellow noodles, 3 ladles of shrimp stock and fry for 3 minutes.
7. 7Step 7: Add the bean sprouts and chives. Stir. Add the cooked shrimps and squid and the remaining prawn stock.
8. 8Step 8: Add more fish sauce if necessary. Cook until the stock is absorbed by the noodles.
9. 9Step 9: Serve with sambal chilli.
