Rub salt and black pepper on all sides.2Step 2: Set the Instant Pot to sauté mode and heat 2 tbsp oil. Sear the lamb shanks one at a time, aiming for a golden crust on all sides, about 3-4 minutes per side. Before searing the next shank, add 1 or 2 more tablespoons of oil. Set the seared shanks aside.3Step 3: Add butter and oil to the Instant Pot. When hot, add onions, carrots, and garlic. When the onions have some color (about 5 minutes), add the roasted red peppers.4Step 4: Add all the powder spices. Add a splash of beef stock to prevent burning. Sauté for another minute, then add harissa paste and tomato paste.5Step 5: Turn off the Instant Pot and add the beef stock. Using a spatula, scrape the bottom of the pot to loosen any stuck bits. Place the lamb shanks inside, making sure the meaty parts are mostly submerged in the liquid.6Step 6: Close the Instant Pot lid, turning the valve to sealing mode. Set to pressure cook on high for 45 minutes.7Step 7: When done, either quick release or natural release. Carefully remove the lamb shanks (they will be soft) with a big spoon or two and transfer to a serving platter.8Step 8: Using an immersion blender, blend the gravy into a smooth puree.9Step 9: Add baby potatoes to the gravy. Turn the Instant Pot back to sauté mode and cook uncovered, allowing the potatoes to cook through and the gravy to reduce, about 15 minutes. Check that the potatoes are done.10Step 10: Pour the gravy and potatoes all over the lamb shanks. Garnish with parsley.getsaucepan.com/r/a7c18bac-9e7c-4bbe-b7ea-e9cbb1e859f1 · Original: https://www.twoheapingteaspoons.com/lamb-shanks-middle-eastern-inspired/
