Lebanese Lentil Soup

1. 1Step 1: Wash the lentils in a fine strainer by running them under cold water.
2. 2Step 2: Add the lentils to a medium pot with the cold water and bring to the boil on medium high heat.
3. 3Step 3: Remove most of the white foam that rises to the surface with a spoon and discard.
4. 4Step 4: Roughly chop the carrot, onion, potato and add them to the lentils along with the turmeric and salt.
5. 5Step 5: Cook for another 20 or so minutes until the potato is done (test with a knife).
6. 6Step 6: Turn off the heat and blitz with a hand blender.
7. 7Step 7: Taste test and adjust the salt.
8. 8Step 8: Serve in a bowl and a drizzle of extra virgin olive oil.
