Easy Lemon Chicken

1. 1Step 1: Cut the chicken breasts in half lengthwise to make thinner cutlets. Sprinkle with salt, pepper, and garlic powder. Dredge in flour until nicely coated.
2. 2Step 2: Add the olive oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 4-5 minutes per side, until golden. Remove from the pan and set aside.
3. 3Step 3: Add the chicken broth, lemon juice, lemon zest, and remaining butter to the pan. Let it bubble for a couple of minutes.
4. 4Step 4: Return the chicken to the pan and cook for a few more minutes until cooked through and the sauce has reduced further. Season with salt and pepper as needed, and sprinkle with fresh parsley if using.
