Saganaki

1. 1Step 1: Beat the egg in a bowl and add the oregano and pepper.
2. 2Step 2: Place the flour in a bowl that allows the cheese slices to be easily dipped.
3. 3Step 3: Dip each slice of Greek cheese into the egg/oregano mix, letting it drip for a second to remove excess mixture.
4. 4Step 4: Place the cheese in the flour and coat both sides, then set aside.
5. 5Step 5: Repeat for all slices.
6. 6Step 6: Add the olive oil to a pan and heat it to medium-high.
7. 7Step 7: Once hot, add the Greek cheese and cook on each side for about 1 minute, until golden brown.
8. 8Step 8: To remove excess oil, pat the cheese dry with a paper towel.
9. 9Step 9: Squirt lemon over the saganaki and serve!
10. 10Step 10: After the saganaki is golden brown, remove it and place it on a hot cast iron pan.
11. 11Step 11: Pour about a shot glass (1 oz) of Greek ouzo over the cheese.
12. 12Step 12: Light it with a match and watch the flame last a few seconds.
13. 13Step 13: Use the lemon (as above) to extinguish the flame.
