1. 1Step 1: Cook the pasta for 2 minutes short of the standard directions.
2. 2Step 2: Add the fresh black pepper in a saucepan and without oil or anything else just grill it a little.
3. 3Step 3: Then, add to it 2 big spoons from the pasta water.
4. 4Step 4: Drain the pasta, retaining approximately 400ml of the starchy cooking water.
5. 5Step 5: To your saucepan, add the spaghetti and half of the water.
6. 6Step 6: Mix.
7. 7Step 7: Then sprinkle over the parmesan but avoid stirring.
8. 8Step 8: Allow the heat of the freshly cooked pasta to melt the cheese slightly, for around 30 seconds, before you then stir it all together.
9. 9Step 9: If you need to add a touch more water you can.
10. 10Step 10: You’re aiming for a glossy smooth sauce.
11. 11Step 11: Serve into bowls, add another generous twist of black pepper, and serve immediately with a Lazio white wine such as Falesco.
