Greek Chicken Souvlaki Skewers With Tzatziki

1. 1Step 1: Cut the chicken breasts into 2-3 cm pieces and place them in a large bowl with all the marinade ingredients. Mix well with your hands, cover with plastic wrap, and refrigerate for 30-60 minutes.
2. 2Step 2: To make the tzatziki, blend the olive oil and grated garlic in a blender until combined. Peel and seed the cucumber, grate it into a large bowl, season with salt and pepper, and let sit for 10 minutes. Wrap the grated cucumber in a towel and squeeze out the excess water. In a bowl, combine the cucumber, blended garlic and oil, yogurt, 1-2 tbsps of red wine vinegar, and a pinch of salt; mix well. Chill the tzatziki in the fridge; serve cold.
3. 3Step 3: Cut the wooden skewers to fit your griddle pan and soak them in water to prevent burning. Thread the chicken pieces onto the skewers, leaving space between them.
4. 4Step 4: Preheat a grill or griddle pan on high heat. Cook the chicken skewers for about 8 to 10 minutes, turning occasionally, until nicely coloured on all sides and cooked through.
5. 5Step 5: Meanwhile, preheat the oven to 250C. Brush both sides of the pita breads with olive oil and season with salt and oregano. Place a large oven tray upside down at the bottom of the oven and put the pita breads on top. Bake for 2 minutes. (Alternatively, use a griddle pan or grill.)
6. 6Step 6: To serve, slice 2 red onions and place on a platter; top with the chicken skewers, drizzle with extra virgin olive oil and a good squeeze of lemon juice. Serve warm with pita breads and tzatziki sauce. For a wrap, spread tzatziki on the pita, add the chicken, sliced onions, tomatoes, and fried potatoes, and wrap.
