Homemade Peking Duck

1. 1Step 1: Choose a head-on, clean, and lean duck (around 1000g) for easy hanging and air drying. Add about 1 teaspoon of white vinegar to clean water and soak the duck for 1 hour. Then tie the duck from the top of the neck with string and hang it on a hook.
2. 2Step 2: Mix 2 tablespoons of oyster sauce with 1.5 tablespoons of Chinese cooking wine and 1 teaspoon of Chinese five spice powder. Spread this sauce on the inner side of the duck.
3. 3Step 3: In a small bowl, mix 2 tablespoons of maltose with 2 tablespoons of boiling water and 1/2 teaspoon of white vinegar. Brush the liquid evenly on the duck skin while it is still warm. Wait 30 minutes and brush again. Hang the duck to dry for at least 24 hours. In winter, you can hang it for up to 5 days.
4. 4Step 4: Seal the bottom of the duck with soaked toothpicks before roasting.
5. 5Step 5: Preheat the oven to 180 degrees C. Place the duck on a baking grill with a lined baking pan underneath to catch drips. Roast for 20 minutes. Turn the duck over and roast the other side for 15 minutes. Lower the temperature to 120 degrees C and continue roasting for 30 minutes. For a duck larger than 1000g, add 10 minutes for each additional 500g.
6. 6Step 6: Option 1: Heat enough hot oil in a deep bowl, then hold the duck by the neck and pour the hot oil over the skin to make it even crispier. Be careful not to get burnt.
7. 7Step 7: Option 2: Set the oven to 180 degrees C again and re-roast the duck for 6-10 minutes, watching carefully to prevent the skin from burning.
8. 8Step 8: Rest the duck for several minutes before cutting. Cut a line around the breast, then divide it into two parts in the middle. Slice the breast meat with skin one by one. Hand-shred the remaining meat and leave the bones for soup broth.
9. 9Step 9: While the duck roasts, make the Peking pancakes. Cut the cucumber into small strips. Cut the leek onions in half, remove the green part, and cut the white part into small shreds.
10. 10Step 10: Mix 2 tablespoons of sweet bean sauce with 1 tablespoon of sesame oil.
11. 11Step 11: Take one duck wrapper, brush about 1 teaspoon of sweet bean paste on the bottom, lay a small bunch of shredded leek onion and a small strip of cucumber, then place two slices of duck breast. Roll up and enjoy.
