1. 1Step 1: With the Instant Pot on saute mode, add the ghee followed by the cumin, green chilis and hing.
2. 2Step 2: Once the cumin is sizzling, add the onions and cook until translucent and slightly golden.
3. 3Step 3: Add the red pepper, zucchini, and after cooking for a few minutes add the garlic, salt, and dry spices. Cook until the garlic is fragrant.
4. 4Step 4: Then toss in the rinsed and drained lentils along with 2.5 cups water. Hit cancel on the IP, change the mode to High Pressure Cook for 15 minutes and let natural release.
5. 5Step 5: Lastly, add in the chopped cilantro and squeeze of lemon if you prefer. Taste and adjust salt. If you like the Dal more soupy you can add water as needed.
6. 6Step 6: Serve with basmati rice, or top it off with crusty homemade croutons. Great on its own or as a side.
