Let the cod cook for about 8 to 12 minutes or until the fish is tender and flaky.4Step 4: Reserve 1 cup of fish water and discard the rest. Let the fish cool a bit.5Step 5: Carefully shred the cod and discard the bones and skin. Set the fish aside.6Step 6: Bake the shoestring fries as per the package instructions and set aside.7Step 7: Beat the eggs with the salt and pepper and set aside.8Step 8: In a large pot, heat the olive oil on medium low heat.9Step 9: Add the onions and bay leaves to the hot oil and sauté for about 4 minutes.10Step 10: Add the garlic and continue to sauté for another 4 to 5 minutes or until the onions are soft.11Step 11: Add the wine and cook for 2 more minutes, letting the wine reduce a little.12Step 12: Remove the bay leaves.13Step 13: Add the shredded fish to the pot and stir.14Step 14: Add the beaten eggs, stir and cook until the eggs set (they'll look like scrambled eggs).15Step 15: This next step can be done in the same pot if your pot is very large. If it's not, continue to the next step using a very large bowl.16Step 16: Mix together the fish mixture, shoestring fries, the olives and parsley.17Step 17: Taste to see if you need any extra salt. In most cases you won't because you cooked with salted cod.18Step 18: If the mixture is feeling a bit dry, add some of the reserved fish water and mix again.19Step 19: Move everything onto a serving platter and top with a little extra chopped fresh parsley.20Step 20: Enjoy the meal with steamed veggies or a fresh salad and don't forget the crusty bread!getsaucepan.com/r/c0b7f66f-ebfb-4ef2-9f94-6efab41a5c08 · Original: https://www.photosandfood.ca/2022/12/12/bacalhau-a-bras-portuguese-cod-fish-with-onions-eggs-and-fries-a-time-saving-hack/
