1 Step 1: Soak the beans from the night before.2 Step 2: In a pressure cooker, fry the tomato, onion, and butter. This “sofrito” is known in Colombia as “hogao” (or buy the ready-to-use mix in our store).3 Step 3: Then add a packet of chicken or meat broth, and the beans with the water they were soaked.4 Step 4: Cut half of the bacon into squares, just like the green plantains.5 Step 5: Put the beans over low heat, while adding the pieces of bacon and the plantain cubes.6 Step 6: Cover and let cook until all the ingredients soften.7 Step 7: For the pork rinds, take the rest of the bacon, add salt, and cut it into strips, making shallow incisions in the fattest part. Bake the strips until golden brown and fry them in the fat released in the oven. They should be crunchy.8 Step 8: Season the meat and fry it in a pan for the powdered meat. Subsequently, cut it into pieces and take them to the blender until it is as its name says, powder.9 Step 9: The other accompaniments should be prepared while the beans finish cooking. Cook the white rice, prepare the arepas, fry the eggs, the ripe plantain slices, and the chorizos.10 Step 10: Plate and enjoy.getsaucepan.com/r/c5d7b6bc-4326-4df8-8e8e-3407c39ac69b · Original: https://keyfoodhollywood.com/bandeja-paisa-recipe/
