Tender stems are fine; if stems are stringy, discard them.2Step 2: Boil 3 cups of water in a pan, microwave, or electric heater. Add ¼ teaspoon salt to the hot water and stir.3Step 3: Once the water is at a rolling boil, turn off the heat and add the spinach leaves.4Step 4: Let the spinach sit in the hot water for about 1 minute, then remove the leaves using tongs.5Step 5: Immediately transfer the spinach to a bowl with ice-cold water (about 3 cups water with 8–10 ice cubes). This preserves the green color; let it sit for a minute.6Step 6: Drain the cold water and press the spinach to remove excess moisture. Add to a blender with the chopped ginger, garlic, and green chilies.7Step 7: Blend into a smooth puree—no water needed. Set aside.8Step 8: Heat oil, ghee, or butter in a pan or kadai. If using butter, melt it over low heat without browning.9Step 9: Add cumin seeds and let them splutter.10Step 10: Add the tej patta (Indian bay leaf).11Step 11: Add the chopped onions and sauté until golden.12Step 12: Add the chopped garlic and sauté until the raw aroma disappears—do not brown.13Step 13: Add the tomatoes and sauté until softened and you see fat releasing from the sides.14Step 14: Add turmeric, red chili powder, and asafoetida (if using); mix well.15Step 15: Add the spinach puree and mix well.16Step 16: Pour in ½ cup water (or as needed) and mix again.17Step 17: Simmer for 6–7 minutes or until spinach is cooked and gravy thickens. Season with salt.18Step 18: Stir in the garam masala.19Step 19: Add the paneer cubes and mix gently. Turn off heat quickly—do not heat paneer longer than 30 seconds to 1 minute to avoid chewiness.20Step 20: Add 2 tablespoons low-fat cream (or 1 tablespoon heavy whipping cream) and mix gently to incorporate.21Step 21: Pour into serving bowls. Optionally garnish with cream or butter.22Step 22: Optionally drizzle with lemon or lime juice and top with ginger julienne.23Step 23: Serve hot with roti or other Indian breads like tandoori roti, phulka, paratha, or naan.24Step 24: It also pairs well with rice dishes like cumin rice, vegetable pulao, ghee rice, saffron rice, or steamed rice.getsaucepan.com/r/ca33e8b3-65bd-4b78-aefb-c1ea8b58094c · Original: https://www.vegrecipesofindia.com/saag-paneer/
