Fried Calamari

1. 1Step 1: Clean the squid before cooking, discarding the spines, ink sacks, and heads. If cleaning yourself, keep the tentacles as they are edible.
2. 2Step 2: Dry the cleaned squid thoroughly, then cut the bodies into rings.
3. 3Step 3: Pour 1/2 inch of olive oil into a large open frying pan and heat on high, but do not let the oil smoke.
4. 4Step 4: Put the flour and a bit of salt into a large plastic bag. Add a few pieces of squid and shake to coat with flour. Remove the rings one at a time with your hands and carefully place them in the hot oil.
5. 5Step 5: Continue coating pieces in flour and adding to the pan, but do not crowd the pan; leave enough room to turn the rings if needed.
6. 6Step 6: Fry until the rings turn golden. Remove from the pan and drain on paper towels. Serve hot with lemon.
