Malva Pudding, South African Baked Dessert

1. 1Step 1: Preheat oven to 350 deg F/180 deg Celsius. Adjust temperature according to your oven; if using a convection/fan oven, you may need to lower it (e.g., 170 deg C, then down to 160 deg C/325 deg F) to prevent burning.
2. 2Step 2: Grease an oven dish. A 7 x 7 x 1 1/2 inch Pyrex dish (18 x 18 x 4 1/2 cm) works well.
3. 3Step 3: Beat or whip the sugar and eggs until thick and lemon coloured. Use a food processor or electric beaters for speed. Add the apricot jam and mix through.
4. 4Step 4: Melt the butter without boiling, then add the butter and vinegar to the wet mixture.
5. 5Step 5: Sieve or mix together the flour, baking soda, and salt.
6. 6Step 6: Add the flour mixture and the milk to the egg mixture in the processor or mixing bowl. Beat well.
7. 7Step 7: Pour into the oven-proof dish and bake until the pudding is brown and well-risen. Depending on your oven and dish, this will take between 30 and 45 minutes.
8. 8Step 8: In a pot, melt together the ingredients for the sauce and stir well.
9. 9Step 9: Pour the sauce over the pudding as soon as it comes out of the oven.
10. 10Step 10: Leave to stand awhile before serving. Serve warm. It is rich and does not really need enhancement, but you can serve with vanilla ice cream if desired.
